It was unexpected. I would describe it as a significant surprise and unquestionably an unsettling actuality.
It’s true. For most of my life, my go-to meal during that extensive “live to eat” era was a highly-caloric concoction labeled as macaroni, cheese and hamburger casserole. It was inexpensive, and oh-so tantalizing to the tastebuds.
It warmed those innards on those cold Colorado nights.
Why the momentous metamorphosis in meal mode?
Well, I now subscribe to the eat to live way of life. I pay closer attention to what I consume and how it impacts my body … and potential future. This includes both what I eat and drink.
What is the revolutionary recipe, this definitive dish of deliciousness?
Don’t worry, I won’t ask for a credit card number and direct you to another website for this potentially life-altering advice.
Consider this a freebie, a tender mercy of sorts.
My daily menu masterpiece is a … fish taco.
Grilled salmon is the most integral ingredient. The filet is prepared on a George Foreman Grill with a smidge of extra virgin olive oil and placed on a paper-plate sized soft tortilla smothered with a mild pico de gallo and shredded lettuce topped with a dab of blue cheese dressing and a slice of melted havarti cheese.
How’s that for a scrumptious snack?
How delightful is it?
I begin to salivate each time I create one of these nutritious and satisfying wraps.
I’ve learned to purchase the fish when it is on sale. I grill the filets on a Saturday morning and secure them in zip-lock sandwich bags and warm one each afternoon in my trusty microwave.
A key lesson I have learned is preparation is a key component of a healthy food plan. No more driving by fast-food restaurants contemplating what foods and drinks I should consume.
It’s an optimum opportunity to save cash, lower your blood sugar, and tighten that belt. Obviously, choose the dab of dressing suited to your particular palate.
Don’t favor the fish flavor? Substitute a lean portion of grilled chicken breast or a couple of fresh slices of your favorite deli meat.
